Honey Roast Pumpkin Soup

1 Butternut, cubed
1 Red Onion, roughly chopped
1-2 cloves of Garlic
750ml of Chicken Stock
1 Tbs Honey
2 Tspn Dijon Mustard
Salt, Pepper & Olive Oil

Method

1. Preheat oven to 200 degrees celcius
2. Coat pumpkin with oil and garlic, and place on baking tray
3. Roast pumpkin for 40 min or until soft
4. Heat pot and cook onion until soft.
5. Add stock, pumpkin, honey, mustard, pepper & salt.
6. Blend until smooth, then serve with a little sour cream
